Fall Food

Fall is a great time for savory cooking. When the temperatures start to cool and new produce is in the stores, it makes me want to slow down and savor my food.

I love my old copies of Martha Stewart’s Everyday Food because each issue is very focused on cooking with produce that is in season. I pulled out a fall issue and decided to cook Squash, Sage, and Ricotta Cannelloni.  What is more fall than butternut squash?

The only changes I made was using whole nutmeg and grating it myself. The flavor is so much better and it really only takes a minute. J also suggested that the cheese mix on top could have been more flavorful. Next time I would try more parmesan mixed in with the ricotta.

I was recently sent a pair of Eeyore Track Pants from OldGlory to try out. They are really cute for the gym or just hanging out in. Winnie the Pooh was my favorite Disney movie as a child, so I have a soft spot for Eeyore. (Please ignore how I look in this picture. Getting J to take a picture of me is like pulling teeth.)

  1. My favorite fall recipe is candied baby carrots. Its so easy & very delicious. Baby carrots, brown sugar, a few splashes of orange juice and a dash of cinnamon, you can even put in a touch of ginger & yummmmm.

  2. Fall is my favorite time of year too. Matts family has a super yummy vegetable stew that he makes every fall. He just made his first batch last weekend and it now it finally feels like fall.

  4. I know I’m not eligible, but the pumpkin cream cheese I am enjoying on my bagel this morning is worth mentioning. Other recent fall recipe wins:

    Roasted acorn squash, cut side up, hole filled with earth balance “butter,” maple syrup, vanilla extract, salt and pepper. Roast at 425 for 1 hour 15 minutes.

    Vegan butternut squash and sausage soup using soy sausage and coconut milk in place of cream, and vegetable stock in place of chicken stock.

    Oven roasted root vegetables: parsnips, turnips, carrots, onions roasted with olive oil, vegetable stock, and fresh sage. Served with rice pilaf
